Summer Recipes: Vegan Sushi
Servings: 6 rolls
For the sushi rice:
1 cup black sticky rice
2 1/4 cups water
2 tbsp rice vinegar
1 tsp water
1 tsp honey
1 tsp pink salt
6 sheets of Nori
Filling:
1/2 long sweet potato
1 avocado
5 big shiitake
1 cup of spinach
1/2 block of tofu
coconut oil to cook in
Sauce:
Sesame miso
3 or 4 tbsp Soy sauce
1tsp white miso
1/2 lime and sesame seeds
Spicy mayo:
1/2 cup vegan mayo
1 or 2 tsp sriracha (depending on how spicy you want it)
a dash soy sauce
Preparation:
Add the rice and water into a pot, bring to a boil then cook it on low heat until water is fully absorbed. Then turn off the heat and keep covered. In the meantime:
Slice the sweet potato the long way, into finger like pieces and cook with some coconut oil on a regular pan.
Slice the tofu into semi thin slices and cook with a little coconut oil, once ready add a little soy sauce to it and let cook on low heat until absorbed.
Slice the shiitakes and cook with a little coconut oil.
While these are cooking stir together the rice vinegar, water, honey, salt and honey together and add to the rice. Mix well, stirring, then let sit uncovered.
When everything is ready place a nori sheet with the shiny side down on a rolling mat or some wax paper, add a ball of rice and spread it out into a thin layer. Add sweet potato, shiitake, tofu, spinach and avocado slices. Roll it, pressing as you roll. You can use a little water at the end of the sheet to seal the roll ,then press it down. For the sauces, just mix everything together.
